Trying to scale/read a level (0-125)ft reading from a pressure sensor with a range (0.625-25)bar. Trying to figure out my unscaled and scaled values. Pressure sensor signal is 4-20mA.

You should start by scaling 1:1 to see what your sensor is outputting. The sensor itself may be 4-20ma but that is likely being scaled and converted to a digital signal. That signal will have a range of something like 0-65535. Your device documentation or your PLC programming will have this information. from there, you will need to know two points to calibrate your system. IE: 2356 == 10 ft and 36657 == 50 ft or whatever use those for the scaled and unscaled values to see the values you are looking for.
